Rice Pudding Tiara
  • 3 eggs
  • 3 1/3 cups of milk
  • 2 cups cooked rice
  • 1/2 cup sugar
  • 1 tsp grated lemon peel
  • 1 tsp vanilla
  • 1/2 tsp nutmeg
  • 8 small pear halves
  • Green Creme de menthe
Beat eggs slightly in 2 qt casserole. Stir in milk, rice, sugar, lemon peel and vanilla. Sprinkle top with nutmeg.
Set casserole in pan of water (boiling), bake 1/2 hour. Stir gently by lowering spoon down side of casserole and moving back and fourth. Bake 50 minutes or until knife inserted comes out clean.
Arrange drained pears on top, hollow side up. Bake 5 minutes longer to heat pears. Fill hollow of pears with Creme de Menthe. Makes 8 servings.
