When your looking for sweet but want to spare a few sweet calories around the holidays this recipe is for you.  These flourless pumpkin brownies are fudgie, and flavorful, and are sure to be a hit at your desert table.  Made with cocoa and pumpkin puree, if you like them on the sweeter side we suggest adding a little extra sugar or even better, a scoop of ice cream.

Preheat oven to 350 degrees. In a large mixing bowl, combine pumpkin, cocoa powder, peanut butter, egg, sugar, vanilla (optional).  Bake in the oven at 350 degrees for 30-40 minutes or remove after a toothpick inserted comes out clean.

  • 3 c. pumpkin puree
  • 2 c. cocoa powder
  • 2 c. peanut butter
  • 1/3 c. sugar or Stevia
  • 1 egg
  • Chocolate Frosting
  • Dash of vanilla
