First Watch Chia Seed pudding is a mix between tapioca pudding and your favorite fruit parfait. Perhaps we should have considered naming it Taparfait? When you’re looking to reach for a healthy snack but also trying to satisfy your sweet tooth this is the perfect mix of healthy and sweet.
What are the benefits of chia seeds and flax seeds? Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Flax seed has also been shown to have heart-healthy effects. Each tablespoon of ground flaxseed contains about 1.8 grams of plant omega-3s. Lignans, which have both plant estrogen and antioxidant qualities. Flaxseedcontains 75 to 800 times more lignans than other plant foods. Your body will thank you after snacking on First Watch Chia Seed Pudding!
- 1 cup strawberries, fresh or frozen.
- two mashed bananas
- 1 cup milk – dairy, coconut, almond ( I used coconut milk)
- 1 tbsp honey
- 2 tsp pure vanilla extract
- the juice of one lemon (optional)
- 1/2 cup greek yogurt
- 3 tbsp chia seeds
- 2 tbsp flax seed
- fresh mint leaves
In a mixing bowl or puree machine mix together all ingredients except chia seed and strawberries until smooth. Once mixture is smooth fold in chia seed and strawberries and chunks of bananas. Refrigerate for 4 hours transfer to a bowl and garnish with fresh mint.
